Review: Heard Burger – Soho, London

Tucked away in London’s Soho, on Foubert’s Place, is Heard Burger, where chef Jordan Bailey keeps things simple and attention to detail high.

Heard started their journey in a food truck in Borough then moved to a fixed venue there in March of this year. 6 months later, in September, Heard opened their second venue in Soho – a prime location for our readers. Hence we wanted to make sure you heard of these burgers.

Chef Jordan brings finesse to the burger scene from his previous Michelin-star training in Oslo and Ireland. His aim at Heard is to transform comfort food into something exceptional. What stood out for us, and one of the reasons why we think Heard is worth a visit is because of what goes on within the supply chain. Heard’s main ingredient, 28-day aged British beef, is sourced from a cooperative of regenerative farms – a practice where farms work with nature to improve soil health, biodiversity and water cycles – ultimately, better for the environment than traditional farming. We are seeing a gradual trend of restaurant partnering with farms choosing regenerative practices.

The menu

We arrived and immediately found great service, being greeted and shown to our reserved seating downstairs. We recommend requesting a place downstairs as this space offers proper tables and is calmer, aimed more for relaxed dining. Upstairs, most counter seating faces a mirrored wall (though a couple of seats offer a direct view of the open kitchen), which would serve for us at least, as a distraction on a date or catch-up with friends. But these upstairs seats do work for a quick in-and-out bite.

I need to declare I am not a burger eater – give me a steak any day. Acknowledging this bias, I opted for the Wild Umami (£12.50) – the vegetarian option, made with a double-smashed spiced black bean and wild mushroom patty, aged Cheddar, kimchi, green leaf lettuce, Heard sauce and pickles. I was impressed at the meatiness of the patty. The burger was stuffed with ingredients meaning maximum messiness when eating. To be clear the bun did not fall apart, this is down to my burger biting technique – surely messiness is the key measures of enjoyment of burger eating, anyway.

My burger-loving colleague opted for The Heard (£13) – a double-smash patty with jalapeño hot honey, Ogleshield cheese, white onion, Heard sauce and pickles, who confirmed it was the right balance of succulent meat, cheese and pickle.

We had both burgers with a side of Heard fries (including nacho cheese sauce and pickles) (£6.50).

The dessert options are either a milkshake or the Ice-cream Sandwich (£8), made with yoghurt ice-cream sandwiched between two slides of sea-salt brownie cookie, dipped in chocolate and sprinkled with crushed raspberries. The ice-cream somehow brought back nostalgia from 1990s school dinners. Whilst it was immaculately presented, it didn’t quite wow us like an immaculate conception.

Jordan has worked hard to pair the drink options with each burger menu item; however deciding we weren’t sophisticated enough to appreciate these, we opted for a simpler choice. Unfortunately there was no non-alcoholic BA-EK wine available during our visit, so chose from the good range of soft drinks.

Overall thoughts

Jordan has broken down all the components (the bun, burger patty, the cheese, sauces) that constitute a burger at Heard, and worked hard to perfect these elements individually and ultimately so that they work together for a refined result: a burger that is way ahead of anything you’d get from any chain restaurant.

We would recommend Heard as a place to recharge with friends if out in soho. And given the perfection of the burgers and the time of year we visited, it left us wondering whether Heard should partner with nearby Liberty of London to create a Christmas tree burger bauble.
